Beef ...  yes beef jerky.

How do you tell folks you are adding a beef product when for umpty-do years you've talked bison?  Don't worry; bison jerky is still here and available most of the time.

Well, when at the Great Range/Rocky Mountain Natural Meats charity shoot July 2025, there was a bag of this stuff in our gift sack.  I tried it.  I scrounged several more bags.  It is, without question, the best beef jerky that I have ever eaten.  It is so good that, like other really good things I find, I want to share it with all of you.

Brush Meats - where we harvest our bison fiber processes these cattle.  This jerky is from Certified Piedmontese; an American raiser and producer of the Italian origin Piedmontese cattle.  These are a double-muscled breed, which is a naturally occurring, inherited condition characterized by a mutation in the myostatin gene that results in hypertrophic muscle growth and increased muscle fiber count. This genetic anomaly leads to increased lean muscle mass, high protein content, and tender meat with little fat, making them efficient for meat production.   There are other double muscle beef (and there are also double muscled dogs and sheep breeds).

History:

Piedmontese beef is an Italian-heritage breed of cattle deeply intertwined with the robust history of fine wines and rich cuisines of the Piedmont region in northwestern Italy, tracing its roots back to the 1600s. Hundreds of years later and 5,000 miles from Piedmont. Certified Piedmontese raises all-natural, healthy Piedmontese cattle on the mixed-grass prairies of the Midwest with fresh water from the Ogallala Aquifer.

Progressive ranchers imported the first Piedmontese cattle to North America in the mid-1970s over a five-year process. Today, the Piedmontese breed represents less than 1% of all cattle in North America. Certified Piedmontese provides the country with a superior product with a reputation for eating quality that rivals Wagyu and premium Angus products but without the heavy marbling and significant pockets of fat that many consumers associate with premium beef.
